Manglorean god nonche



Sweet, rich, and tender textured, Rajapuri mangoes are freshly grated at the Santacruz market to make way into Mangalorean chef Prabha Kini’s Linking Road home where she cooks it with equal parts sugar, some red chillies, a pinch of hing, a few untoasted cumin seeds and lots of love. It is slow-cooked to one-string consistency to make kisshili ambuliye god nonche.

Aam papad

Nesha, an Agrighar initiative brings a southern twist to the north’s popular ‘aam papad’, with their mango rolls. Made with sun dehydration technology, these rolls have a tang and kick of fresh mangoes, rolled into a compact cylindrical shape.

Gujju chundo

Masjid Bunder’s Sushila Lalka prepares an authentic delectable chunda that her customers can’t stop talking about. Spicy, sweet, and sour, chunda is a mango pickle made with raw green unripe mangoes, adding the perfect kick to your lunch preparations. Lalka starts preparing her seasonal dishes when March ends and sells out her stock among neighbours and those interested as the monsoon comes, managing to sell about 2000-2500 kgs worth of pickles. Her fresh mangoes are sourced from Bhuleshwar, while her spices come from the spice market in Vashi. A Gujarati classic, it is an easy recipe that can be prepared and eaten instantly and is even vegan and gluten-free.

Kutchi fajito

Coming straight from the land of Kutch, this mango curry is about to become your seasonal favourite. Served with roti or rice, a Kutchi mango fajito is a dal-based curry with just the right amount of spice to it. Lipaa Shah’s Bandra-based Food Fiesta is one of the few outlets selling this traditional preparation. Shah first started serving her authentic pickles way back in 2016 and sells a variety of mango-based condiments. After speaking to mid-day about this tangy curry, she’s open to sending the dish your way on special request.

Keri no murambo

Zenobia Schroff, who lives in the heritage precinct of Dadar Parsi Colony, also caters for food from the community but we will recommend her especially for her remarkably authentic pickles and jams. Her summer menu includes the keri no murambo (murabba), with finely grated leeli keri or raw mango. Unlike other clawingly sweet preparations, this one has a tangy kick that comes through the chashni like a nimble knife, which we love. Murabba (Arabic word) refers to a seasonal fruit preserve with a touch of spices, and while most murabbas are made in winter, this one is enjoyed in summer when mangoes are in abundance.Have a teaspoonful as dessert or drizzle a bit over vanilla ice cream. But the Bawas prefer it for breakfast slathered on toast-butter with a hot cup of lemongrass-cardamom ‘choi’.

Konkan aam panha

Hema’s Veg Rasoi in Matunga Central has the perfect summer thirst quencher with their aam panha served in 200 ml and one-litre bottles. A traditional homemade cooler, aam panha is made with raw green mangoes, which are a great source of pectin, a fibre. Depending on the customer’s preference, Hemangi also tunes the sweetness of the panha. As she talked about the multiple dishes her customers have come to love, she couldn’t help but agree that murabba is a Sindhi classic. This sweet and tangy condiment pairs well with almost anything, from khichdi to paratha, and some even like to have it as a dessert of its own.
